It’s Hungry Friday again over here and we’re super excited to share our latest food finds! Maybe it’s the upcoming Memorial Day weekend or the bounty of early summer harvest–you’ll see that we’ve been inspired by touches of red, white, and blue, as well as bursts of orange and green. We think they’re this week’s colors of YUM! So, dig in,  and be inspired 🙂

Avocado Caprese Salad - Hungry Friday - Altamonte FamilySalads and Starters

Stacey at Stacey Homemaker just wow’d us with this stacked Avocado Caprese Salad! We already love a good Caprese salad and she made it even better by adding some avocado slices! Isn’t it amazing how a simple addition can make such a bold and delicious statement? If you’re doing any summer entertaining anytime soon, this beauty is definitely something to add to your list!


One Pan Shrimp Pesto Penne PastaEntrée

It’s been crazy busy here in our house and these one-pan, no-boil, no-drain wonders have certainly been a huge lifesaver at the dinner table. We never really heard about no-boil and no-drain until we tried a new kind of Penne pasta earlier this month. We threw the pasta into a skillet and added just a few of our favorite ingredients–and viola, dinner is served! Check out how we made this One-Pan Shrimp Pesto Penne in just 20 minutes.


 

Blackberry Coconut Cake - Hungry Friday - Altamonte FamilyDessert

Now doesn’t this cake just look oh-so-appetizingly-gorgeous? If you’re looking to pick up a new skill (that’s me–never heard of crumb coating before), Patty at The PKP Way shares some thoughtful baking tips as well as the recipe for this glorious Blackberry Coconut Cake! It’s got all the beautiful layers and is truly a cake for any occasion!


Snack

Very Berry Breakfast Yogurt Pops - Hungry Friday Feature - Altamonte FamilyJessica at Time Out With Mom sounds just as excited as we are about Summer Vacation! The end of school is near!!! This means more hungry kids raiding the refrigerator, so we gotta stock up on the good stuff! Speaking of the good stuff… Jessica inspired us with a fun way to celebrate with the kids with these delightful Very Berry Yogurt Popsicles! We love the added honey and granola–and best of all, these are made with organic whole milk yogurt! YUM!
