Happy Friday! It’s hard to believe that we’re well into the middle of May, already! Where did the time go? We’re also super excited that we’re now on Week #4 of Hungry Friday! Thanks (a hundred times over) to all of you for supporting this fun series! We’ve learned so much from our favorite bloggers and readers–yes, we’re talking to YOU! Did you know that Hungry Friday gives us that much needed push to post a recipe of our own, at least once per week? That’s right–thanks a huge bunch for keeping us accountable! Anyway, moving forward, it’d probably be prudent to write about Hungry Friday on a full stomach! Otherwise, we’d just get overly distracted by all of the good food featured on this post! Speaking of being distracted, we better take a step back so you can go on with your day and enjoy some foodspiration from a group of very talented foodie bloggers. Enjoy!

Salads and Starters
We decided to add some “Fresh From Florida” celery into our Easy Egg Salad On Multi-Grain Crackers. When we lived in Hawai’i, we’d use locally grown Manoa lettuce. Either variation tastes good, but we just love how skipping the lettuce allows the multi-grain crackers to absorb all of the flavors.
Entrée
Liren shared this gorgeous Halibut En Papillote With Carrot Top Pesto on her blog, Kitchen Confidante. We love love love halibut, and we think it’s brilliant how she encourages us not to dump those precious carrot tops! Instead, she inspires us to make carrot top pesto. We haven’t tried it yet, but from what we’ve heard and read–it tastes pretty good. Thanks, Liren!
Dessert
It’s been feeling like the summer over here in sunny Florida, every single day! We sure could use some of this Vanilla Hazelnut Ice Cream by Cathy & Adam at Our Mini Family. Best of all, it’s no churn! Totally doable. Pssttt– there’s a secret ingredient to this thing, so don’t miss out and check out their recipe.
Snack
We can’t wait to try LaVonne’s Tropical Granola recipe which she shared on her blog, Long Wait For Isabella. While this sounds so refreshing and perfect for the summer, we think it’s something we can all enjoy year-round. By the way, it’s made with some orange juice! Ohhhh, get your pen and paper ready and start taking notes. This snack’s a clear winner–and a super thoughtful homemade gift in a jar!

I don’t know how you keep finding all these delicious recipes, but again, you’ve hit one out of the park! Well done. I love egg salad but never thought to put it on a whole grain cracker ~ love the crunch and no soggy bread. I’m always on the lookout for new ways to cook fish and this is such a pretty presentation ~ can’t wait to try! — and the dessert — don’t know about you, but I could easily combine the snack AND the dessert and eat them together ~ why settle for just one? 🙂 Thanks for sharing — YUM!
