Football season is coming up and we’re ready to party! What’s your favorite game day or tailgating grub? Our guests know that when this exciting season comes around, they can expect something spicy and delicious cooking up in our kitchen… like our version of Ultimate Game Day Nachos with chipotle and cilantro sour cream! Oh, yeah!
When it comes to football, the spirit of rivalry becomes real in our home! It’s so real that even our food gets involved! Let’s just say that we have both vegetarian and non-vegetarian camps, and both parties won’t come to an agreement on whose version is The Ultimate Game Day Nachos! So, we decided to make both versions just to keep both sides happy. Can you tell we’re the referee? Oh, and we also love being the water boy / water girl. Besides water, we also offer the following drinks to our guests…

Anyway, have you tried these Wise Restaurant-Style Tortilla Chips? They’re perfect for making our Ultimate Game Day Nachos (vegetarian or otherwise). Some can agree with us that the secret lies in the tortilla chips…
Okay, that’s part of the secret. Another part would be the cheese! Do you like adding chipotle peppers in adobo sauce to your freshly grated cheese?
Adding in chipotle peppers: Some people like to chop up the chipotle peppers before mixing them in with the cheese. We prefer to “rough-chop” them with a wooden spatula while mixing at the same time.
So… we already told you about the Wise Restaurant-Style Tortilla Chips and “chipotle cheese mix”. If we were buying some new tech (which we just did last week), these are part of the specs that would deem it worthy to be called “pro”–or in our recipe’s case, “ultimate”. But that’s not all! There’s also the cilantro sour cream… oh, and the cola-infused savory pot roast!
Recipe: Cola-Infused Savory Pot Roast
To keep things simple before company arrives, we like to make pot roast in the slow cooker!
Adding in the Coca-Cola to the pot roast recipe added a whole new flavor dimension that totally knocked our socks off!
Servings: 6-8
Prep Time: 10 minutes
Cook Time: 8 hours
Total Time: 8 hours 10 minutes
Ingredients
- 4 lb well well-marbled chuck roast
- 24 oz Coca-Cola
- 2 tbs salt
- 2 tbs pepper
- 1/2 cup soy sauce
- 1/2 cup vinegar
- 1 tbs chili oil
- 1 tbs sesame oil
- 2 tbs agave nectar
- Juice of 1 whole lime
- 1 tbs sweet dried basil
- 4 cloves garlic, minced
- 1/2 cup dry roasted sesame seeds
Directions
- Place chuck roast in slow cooker (if desired, lightly brown both sides of chuck roast on a skillet before transferring over)
- Combine all other ingredients in a medium bowl then pour over chuck roast in slow cooker
- Cook on low for 8 hours
Meanwhile, some of our guests wanted a little extra cilantro sour cream to top off everything on their nacho wish list! They simply scooped up some vegetarian skillet nachos, added some cola-infused savory pot roast, and then topped it off with a little extra green goodness! Now *this* is their version of The Ultimate Game Day Nachos!
Recipe: Ultimate Game Day Nachos with Chipotle & Cilantro Sour Cream
Now, here’s our recipe for the vegetarian version. Whether you decide to add on meat or not is up to you (or your guests). Either way, we know that this scrumptious creation infused with all of the chipotle peppers in adobo sauce goodness (tamed with the tanginess of the cilantro sour cream) will keep your guests munchin’ and crunchin’ with excitement with each pressing minute of the game clock!
Servings: 8-10
Prep Time: 10-15 minutes
Bake Time: 7-10 minutes
Total Time: 25 minutes
Ingredients
- 1 bag Wise Restaurant-Style Tortilla Chips
- 3 cups freshly grated cheese (we used Havarti, New York cheddar, and sharp cheddar–it’s what we had on hand)
- 7 oz chipotle peppers in adobo sauce
- Fresh Pico De Gallo (homemade or store-bought)
- Fresh cilantro, to garnish
- Radish slices, to garnish
For the Cilantro Sour Cream
- 14 oz sour cream
- Fresh cilantro, chopped (we used 1/2 bunch)
- Juice of 1 lime
Directions
- Preheat oven to 400 degrees
- Mix cheese and chipotle peppers together in a mixing bowl, then set aside (some people prefer to chop up the cilantro peppers beforehand; we prefer to rough chop it with a wooden spatula while mixing it in with the grated cheese)
- Make a layer of tortilla chips on a cast iron skillet, then top with 1 – 1 1/2 cups of cheese
- Make a second layer of tortilla chips, then top with remaining cheese
- Bake for 7-10 minutes or until the edges of the tortilla chips are slightly golden brown
- Top with Pico De Gallo and cilantro sour cream, then garnish with radish slices and fresh cilantro
To make the Cilantro Sour Cream
- Pulse cilantro in blender until smooth
- Fold in sour cream and blend until smooth
Tip: To save time on the day of the party, make this the night before!
