Do you like throwing parties and buying a little extra food, just in case? Do you find yourself always having to think about what to do with all the leftovers? When we threw our football party, we picked up a bunch of store-bought pico de gallo, chopped onions, sliced jalapenos, and shredded cheese to complement our End Zone condiments section (for the Sloppy Joe Sliders). To keep our toppings fresh, we don’t serve fresh-produce-type food all at once (we’ve found that refilling the serving bowls as needed was a much more efficient way of doing things during parties). Anyway, we’ve got a quick and easy recipe idea for a Game Day Leftover Breakfast Omelet (that’s also low carb) to share with you today!
Recipe: Game Day Leftover Breakfast Omelet {Low Carb}
If you’re looking for a low carb, Mexican twist to your daily breakfast routine, here’s a quick and easy recipe using Game Day party leftovers!

Prep Time: 5 minutes
Cook Time: 15 minutes
Total Time: 20 minutes
Ingredients:
- 2 tsp coconut oil, divided
- 2 eggs
- 1 tbs nonfat Greek yogurt
- 3 tbs chopped red onion
- 1 tbs shredded Mexican cheese
- Salt and pepper, to taste
For the topping:
- 1 – 2 tbs pico de gallo
- Fresh avocado slices
- Fresh mangoes, diced
Instructions:
- Heat 1 tsp coconut oil in a nonstick pan over medium-high heat.
- Add chopped red onions, stirring occasionally, until slightly caramelized (approx. 10-15 minutes), then set aside.
- Whisk together eggs and yogurt in a bowl.
- Heat 1 tsp coconut oil in a nonstick pan over medium heat (you can use the same pan, if you wish) then pour in the egg mixture.
- Once the egg mixture starts coming together, use a spatula to gently loosen it from the plan, then flip it over.
- Add the caramelized onions along the center of the omelet, while the bottom of the omelet is still cooking.
- Fold over the sides of the omelet to cover the caramelized onions.
- Top with cheese and remove the omelet from the pan as soon as the cheese has melted.
- Serve omelet on plate then top with pico de gallo, cubed mangoes, and fresh avocado slices.
